Its been a while since I have been able to really cook, like really break down and cook something.  We have been way to busy.  So finally this week I broke down and decided that no matter what I was going to make these tacos tonight.  They have been on my radar for a while and was looking forward to making them.  Its been a long week knowing this is what I had to look forward to on Thursday.  Well today was Thursday and my stomach is full, almost too full after my repeat visits up to the counter.

I must caution that even though they may look delicious, and they are; they do take quite a while to make, I wish I had thought of that prior to starting them that they would take longer than I thought, by you live and learn I guess.  With that one caution here is the recipe.

Ingredients
1/2 chipotle chile, canned in adobo sauce
1 tbsp olive oil
1 lb pork tenderloin
1 tsp dried oregano
2 tsp ancho chile poder
1/2 tsp cumin
3/4 tsp kosher salt
1/4 tsp ground black pepper
4 slices of fresh pineapple, 1/2″ thick
1/4 c fresh cilantro leaves, chopped
3 tbsp thinly sliced red onion
3 tbsp fresh lime juice
1/2 tsp ground chipotle pepper
soft corn tortillas

Instructions
Begin by mincing chipotle, then combine with olive oil and rub evenly over pork.  In another bowl combine oregano, chile powder, cumin, 1/2 tsp salt and black pepper.  Sprinkle spice mixture over both sides of pork and let pork stand for 30 minutes.  Prepare the grill for a hot fire.  Once the grill is ready oil the grate with vegetable oil or cooking spray.  Once the grate is good and hot throw pineapple on over indirect heat, cook 5 minutes per side.  Once pineapple is cooked chop roughly and combine with ground chipotle pepper, remaining salt, cilantro, lime juice and onions in a medium bowl.  Set aside.  Grill pork over indirect heat until an instant read thermometer reads 145°F.  Remove from grill and let rest for 5 minutes on the counter.  Roughly chop, prepare tortillas according to their instructions.  Pack each with equal parts pork and pineapple salsa.  Enjoy

Its sweet, its spicy and delicious.  This is a recipe I think that will make its way into the rotation, this was a good dinner and will make an excellent lunch tomorrow.

Well they are finally gone, and sadly so, the last rack of ribs we had in the freezer was dinner tonight.  But not without some trying something new first.  In the past I have been a fan of jerk chicken, and have made some completely from scratch…more about that later.  I have also used some store bought ‘jerk’ rubs in the past and they are alright but wanted to go out and try something new.  So that is what I did, I found a jerk rub and complimenting glaze I liked and tweaked it a little and it was a bit spicy, so if you are not necessarily for spice, you might want to back it off on the pepper a little.

Jerked Pork Ribs

The little strange yellow color in the picture is the pineapple glaze that didn’t get absorbed, its tasty even if it does look a little strange.  Using the recipe for the rub below, I rubbed the ribs and sealed them in plastic wrap in the fridge over night.  This morning I took them out and let them set out for about an hour before I fired up the smoker.  I then smoked the ribs using the 3-2-1 method using pecan wood.  During the final hour I began brushing the glaze onto the ribs and did so three times, it could have really used one or two glazings.

When it was all said and done I let them rest covered with foil and a towel for about a half hour then it was eating time.  They were sweet and spicy and had a nice jerk flavor, not quite authentic but still very good.  We will be making these again.

Jerk Rib Rub
Ingredients
3 tbsp dark brown sugar
2 tbsp kosher salt
1 tbsp ground black pepper
2 tbsp ground coriander
2 tsp garlic powder
2 tsp onion powder
2 tsp dried thyme
2 tsp ground allspice
1 tsp ground cinnamon
2 tsp cayenne pepper (remember it was spicy)

Instructions
Combine all until mixed uniformly.  Rub into meat.

Pineapple Glaze
Ingredients
2 c pineapple juice
2 tbsp cider vinegar
1 tbsp red wine vinegar
3 tbsp dark brown sugar
3 tbsp butter
1/2 tsp ground black pepper

Instructions
Combine all ingredients in a sauce pan.  Heat to a boil and cook, stirring occasionally, until mixture is reduced to about half.

Like I said they were tasty, I am glad I have leftovers for tomorrow.  They should make a fine lunch.

For some reason on the way home from work today I had an urge for some pineapple glazed grilled chicken, which was strange because I have never had pineapple glazed grilled chicken in my life.   Now I have had grilled pineapple, which I like and grilled chicken, which without variety is boring.  So I gave it a whirl and came out on the other side with a sweet, tasty and relatively quick recipe, I am going to be holding onto.

Pineapple Glazed Grilled Chicken and Pineapple on the grill

Ingredients
2 chicken breasts
1 can of pineapple slices
2 tbsp dijon mustard
1/2 tsp ground dried ginger
1 tsp curry powder
1/4 tsp cayenne
2 tbsp honey
1 tbsp brown sugar
1-2 tbsp corn starch

Instructions
Start by draining pineapple and reserving juice.  Combine juice, mustard, ginger, curry powder, cayenne, honey and brown sugar in a small pot and heat over medium to a boil, stirring constantly.  Slowly add in cornstarch until it thickens to a maple syrup consistency.  Remove from heat and set aside.  Get the grill ready, when it is at a medium/medium high temperature lube the grate with vegetable oil and start grilling the chicken.  When the chicken is about 5 minutes from done (use your own judgment), add pineapple to grill and brush with glaze.  Then brush chicken with a generous amount of glaze on both sides.  Flip pineapple and brush the other side with glaze.  Use the remaining glaze on the chicken remove both chicken and pineapple when done.  Eat chicken piled high with pineapple.

I ate mine with a healthy portion of spinach salad with mandarin oranges, grilled pineapple, bacon and raspberry vinaigrette.
